my marinade consists of:runny honey,
dark soy sauce,
5-spice powder,
balsamic vinager,
sherry vinager,
garlic, chilli and ginger,
mirin,
fish sauce and worcestershire sauce.
the quantities are the secret bit...
edit: and a wee bit of ground coriander!
