See I prefer my veg crispy and less buggered to death in a pan... its probably because I'm shit at cooking it!! :(

nothing wrong with cooking things to a crisp!
use a steamer then. not for things like courgette, that would ming, but carrots, broccoli, cabbage, all that sort of stuff should be steamed for extra tastiness.
