We are all three happily ensconced in the recently revitalised "chez-Blaireau" and vigourously preparing for the arrival of 5 Polish in-laws and all that goes along with a Polish Christmas.
I have experienced two Polish winters but only one Polish Christmas. It was the most wonderfull Christmas since my childhood.
Anyway, pork is the staple meat of non-Jewish central European omnivores.
And I love ribs.
So yesterday I did a
MAHOOOOOSIVE
big freezer-filling shop at TECHNO and a local wholesaler.
At the butcher counter in the wholesaler I asked the spotty yoof if he could furnish me with two dozen racks of pork spare ribs, for preparing and freezing purposes, to which he replied "24? Cos maybe you only meant a dozen and made a mistake?
Anyway he gets away and comes back with a ten kilo box of frozen pork spare-ribs.
I asked him how many racks were in a box and was surprised to hear 40. For some reason it was a surprise. It took fifteen minutes and two phone calls "upstairs" for our lad the butcher to comprehend that it was not legal to charge me £1.22 for the box the ribs were in.
£36.74 for 10kg of ribs! Yeah!!
And last night, calling upon all of my culinary experience, I did a recipe-experiment by way of establishing a benchmark for future rib-cookage. The details of this recipe must remain secret but 4 types of chilli, 3 types of sugar, 2 types of vinager...
This very day they recieved a twelve-hour slow-roast at mearly eighty degrees centiflux and upon examination were discovered to have converted completely into "WIN", whatever the fuck that is.

please tell your secret BBQ recipe, I created such a wonderful concoction the other day that I actually took photos, it was basically, cumin, lemon juice, paprika, mustard powder, garlic powder, olive oil, soy, white wine vinegar, tomato ketchup, brown sugar, and a couple of other things, mixed into a bowl, then microwaved gently to reduce, into the stickiest thickest bowl of greatness ever... after making I actually emailed a friend with the recipe so I can check on the missing ingredient, but I don't think it was much.
