I don't normally bother with Bay Leaves.
I just can't get my head around putting it in then taking it out (ba-doom - tish!) but Ze German has a tree so I might give it a whirl now that we are co-habiting.

You put it in to flavour
then take it out because no one likes eating dried leaves, then you turn around and stab a fork in your eye

the bay leaf not the fork but tbh, my stock tastes grand without it.

Peppercorns too, half a handful.
Really improves the flavour without imparting any of that peppery heat. Don't add salt though.
