I made banana cupcakes a few weeks agowith cut up chunks of banana in the cake and they went really well, the banana kind of caramelised in the cake so they were sort of natural banoffee.
I love the layered fruit cupcakes, the fruit goes all squishy and nom in the cake. I made up an apple and cinammon one and it tasted like crumble, it was awesome.
