Yeah it is fun isn't it?We had double glazing put in years ago and 3 weeks after the ceiling in the dining room fell in. So. Been there done that. As long as you get a shit hot plasterer to do the finishing you'll be fine.

we've taken the ceiling down in another room which was finethis one was bigger and easier though which is nice.
Plasterer should be able to cope, no problem. To be honest the rest of the plastering in the house is a bit ropey being 100 years old, so a bit of roughness won't matter too much if it ends up that way. which it probably won't.
