To echo what's been said above, medium rare in a decent restaurant, rare in an amazing restaurant.
I love a chicken sagwala, because I really love spinach.
I love most cheese, but especially Mexicana, a spicy cheese! Other strong contenders are feta, halloumi, extra mature cheddar, stilton and a proper good brie.
