I'm a yorkshire lass and my yorkshires are shamefull.
I put it down to the electrickery being different up south.
A tray full of batter rises ok, but individual ones come out like proffiteroles.

You think that's an excuse?
I moved from sea level UK to live at over 850 metres altitude and nothing cooks like you expect it to. We can do Yorkshires but it takes experimentation and often luck to get 'em right.
