If there weather's good take the walking tour of 1916 related sites, it'll give you a better feel for the city than any of the bus tours.
The national museum at Collins Barracks is excellent, as is the National Gallery.
Stay out of Temple Bar.

I've done the Jameson tour
It was quite good until the end when I realised I don't actually like whisky.
