conspiracy !there is an option to 'Add this User as a Friend' on profile pages but then I don't know where they go after I've added them.

You should get a link to "Friends' Activity" at the top right, next to the one for messagesand that gives you a feed of all threads started by people you've added, as well as any posts they liked (if they've chosen to share that).
