TJ! as requested earlier this week I haz been shopping! As soon as I have a charge camera I shall be cooking meatenburg!
EDIT: It shall be a beef and chicken meatenburg to have colour contrast and I have designed a proper recipe which I shall make available.

EDIT you could actually do that quite nicely in a Wellington stylee. Assemble the cuboids of meat, surround with pate and pastry, then bake to deliciousness.
I await the outcome of your experiment with anticipation...

I'll have you know I orginally went to catering collage. This'll be a proper job.
For contrast the light meat weill be freedom farmed chicken with lemon zest and the dark will be lamb with garlic.
I won't go into the recipe and methods until I have done it. Just call me Heston biarch!*

Are you meatloafing it?
chuck a few drops of cochineal in the beef as you grind it to give a good contrast. I don't know of a yellow food colouring to use. Yellow never looks appealing unless it is Jelly. Actually not even then.
