but deffo not all done physically frame-by-frame despite what they say (clearly tongue-in-cheek) at the end...zoom in on the video and concentrate on any four coins in a square and notice that they stay in exactly the same position when they appear and disappear.

If a 'pixel' is off to one side in one frame, it's always off to the same side by the same amount whenever it reappears.
