I don't think he is. Ellis only wrote one anthology and there was minimal gore in it.
Palahniuk (who also wrote Fight Club) wrote an anthology (Haunted) riddled with mutilation.

Not really SF as a category and Guts isn't one to easily be blanked from the memory.
