They blast them with chemicals.to kill spiders and bugs and to stop the bananas naturally releasing a chemical they have that ripens other fruit.

And they blast them with gamma radiation too, to kill off any bacteria or microorganisms that could cause spoilage (or maybe not in this case.)But neither process on its own would leave any residue that makes them smell like old socks.
OP, were these "organic" bananas?
As opposed to those inorganic bananas you get that are made of cast iron and sand.
