I ordered liver in a fairly posh, French restaurant
and was asked how I wanted it cooked. Having only had it cooked to leather, as a child, I asked how the chef liked it. "Very rare," was the answer, so I chose that (the waitress wasn't entirely convinced that this was a good idea). Much to my delight, liver cooked very rare is absolutely delicious.
Kidneys are also delicious, be they in a pie, or pudding, or dusted in flour and fried up for breakfast. Having to soak them in milk, to remove the odour of piss, however, does take the shine off.
