I flamed brandy in the pan for my "Steak in Chains"!
It's pretty much Steak Diane but with sliced leek, red pepper and gorgonzola added to the sauce.
I have to write down what I did because it tasted amazing. Sure there was a little too much salt (salting the steak, salting the sauce and then salting the finished dish was one too many saltings) and the steak was very rare, but it was still fantastic.
