if you were to say "no mistake is too great"
could it be shortened to "no mistake's too great"

In my mind if I heard someone saying "no mistake's too great"
I would anticipate a follow-up based on the idea that what they had said was "no mistakes too great..."

*awaits inevitable smackdown*

this is what happened
am i incorrect in giving it an apostrophe?

Not at all
"No mistakes too great" sounds like you're about to follow it up with some sort of poncey witticism. To truncate "no mistake is too great" as you did is theoretically correct, I just wouldn't use it myself
