Point worth noting here. You might have more chance of a job if you're prepared to work on Monday, Tuesday, Wednesday and Thursday... as well as Friday.

I'm sure I read somewhere that waiting staff were taxed, based on 'expected tips' or that they received no minimum wage

Aren't there any high-end restaurants you could try your luck with?
The folk there would probably be better tippers, if that is where the bulk of your income would come from.
