Cheddar cheese is like vanilla ice cream...... you can get cheap ones that are fucking dull, and you can get expensive ones that are lush....but in general it's a 'default' which is borring.
I love brie/cambert kinds, the maturer the better, 'pie de anglois' is fucking lush lush LUSH. Marks do about 5 cheeses now that are maturish and soft and slightly gluey and PERFECT for my tastebuds and texture-buds.
