Waitrose do this lamb shank slow cooked in vacuum pack. Remove form pack put in an oven for 45mins.
So I reduced some red wine, added the fantastic juices from the vacuum pack, a pot of beef stock, and reduced down to a gnats before it went bovrily.
slowly fried off some very finely chopped onion and garlic, then added the stock and a tin of drained lentils. by which time the lamb was ready. Shredded the meat falling off the bone and added to the stock and lentils.
Not bad at all. Meatiness squared, really intense.
