How can there be so many stories agmonst so many unconnected cultures throughout the whole of history, that has ghost stories, if they aren't real?
It's not like Batman or Spiderman where only one culture/person has thought of it, and spread the story through media.

Because everyone in the world has or will have experience of death.

But going back to the days where we all lived in the forrests and caves, I'm sure people would have thought "That's a bear moving my stuff when I'm not around" than "That is the dead 'spirit', which I have no concept of, moving my shit around".

Old ghost stories and folk tales
Tend to be a bit more involved than "Woah! That wasn't there when we went out"
They are usually more along the lines of your story about your dad calling you.
