I have a chicken breast and am trying to decide how to cook it
I also have an onion and a red pepper and some chilis and some spinach and some chopped tomatoes and ALL THE HERBS and ALL THE SPICES and goats cheese. I figure I ought to be able to make SOMETHING.

Chop the chicken up, fry with some onion and pepper and spices and herbs
pour on tomatoes. Eat with pasta.

Goats cheese and spinach stuffed chicken breast
or make a sauce with the onion, pepper, chillis, tomatoes and spinach, pan fry the chicken breast and serve it in the sauce.

That's what I had last night
with a little chili pickle in there too. I'm out of pancetta to wrap it in though.
