I got a letter from the tax man about my work in the cab office this weekend.
They didn't pay any tax for my employment, and are claiming they paid me gross and I should have paid my tax out of that, so there is a bill of about a grand.

I'm gonna speak to my accountant on monday, and I'll say "Well, I was being paid £5/hour, so I thought that was net, given the fact that it would be illegal to pay that to me gross". I might have net/gross the other way 'round,

You have got it the right way around.
That's pretty shit, Gonz, but it sounds as though you've got a good case to make.

I think I'll say to them if it kicks off....
..."That's fine, you owe me the pro-rata 54 days wages in holiday pay and I'll ignore the sickpay I never got and the extreme stress and anxiety due the discrimination of being forced to work while ill (on threat of being docked wages ON TOP of not being paid). I'll even ignore the fact that I was threatened with £1/minute fine for being late whilst being paid iligal wages. And the fact that I bought countless rolls of toilet paper out of my own pocket because you wouldn't supply those facilities. And the fact that you still owe me £800 for the website you never paid for.... and I won't encouridge the other staff who were treated the same, or even worst should they not have a willy between their legs, to do the exact same".

It's not your responsibility to make sure that your tax contributions are met
Unless you are specifically advised that you are working on a contract/self employed basis.

It's their problem, not yours.
