For perfect roasted spanish onions.
- cut the onions into eighths, keeping the core and place into an oven dish
- splash in some olive oil and white wine vinger (white vinegar is okay but don't use balsamic, it screws up the taste!)
- sprinkle a little salt and pepper evenly over the top with a wee bit of caster sugar over that.
- add a clove or two of garlic, roughly chopped, and a sprig of rosemary or thyme
- cover with glad bake - then tightly cover that with foil to steam it.
- chuck into an oven on 180degrees celcius for 20ish minutes. Wait until the onions are a vibrant pink, then cook for another five minutes until a skewer slides in easily.
YUM YUM!! perfect with just about everything I can think of. Except asian food. Roasts dinners, pastas, risottos, bruschettas. yummy!

this has a lot of sweetness to it that doesn't work well with a lot of spices used.
I've tried it. Blech. I wanted to combine my two favourite foods and it didn't work. Maybe I didn't find the right thing but still.
