Does anyone know of a bit of open source software
that highlights all the verbs or nouns, adjectives, adverbs and so on in a piece of text?

I just went to sourceforge and typed in "parts of speech". I recommend trying a few different search terms, like Grammar and Parser, and see what you find.

There's also the Natural Language Toolkit, also written in Python.
