mmmmm.
catfish is delicious. there's a cajun restaurant i go to that does a hazelnut-crusted catfish. getting hungry just thinking about it.

Best way to clean them
is with milk and rock salt. Just had the chef at my local filet them for me. Catfish fry for dinner tonight!

how heavy were they? filleting smaller ones would seem more bother than its worth. still yummy though.
