Pheasant is most pleasant
It's nice, rich but not overpowering meat.

A friend of mine has given me a brace every Christmas for the past few years. I've become quite proficient at skinning and gutting them now. Tasty!

Had it many times when I was I growing up
Unfortunately my Mum is a rubbish cook so it was always extremely dry. I hope to give it another go and see what I'm missing.

It's easily overcooked
and the meat dries out more readily than chicken. But a little water/butter in the roasting pan helps.
