Or arrogant. Or a mix of the two. You should just pick on her to try everything until she realises she's being rubbish.

she'll try something once or twice and then say "I can't do that" and I'll say "well keep trying" and she'll go "no, it's not gonna happen" and sit down.

don't give her extra classes and almost ignore her. If she's not going to make the effort then you shouldn't bother either.
Just take her money. :-)

She will start to hold the others back though because she refuses to do moves that are a bit difficult, painful or scary. We did a move last night where you climb up the pole, grip it with your legs and then lean right back so you're upside down, but she wouldn't take her hands off so she never even got horizontal, let alone vertical. She told one of the other girls that she would be happy to do it if there was a big strong bloke holding her up but because it's just me she doesn't feel safe. However, when she let go of the pole entirely a few weeks ago, I caught her and she didn't fall, so I don't know what her problem is.

that's her problem. She's obviously continually annoying you, so you need to get rid of her.

I'm such a pussy though, I hate confrontation. I'm hoping to get another couple of classes soon so maybe I can bump her back down to the beginners, especially if she refuses to do the moves that the now intermediate girls are doing. That'll probably get rid of her.
