Ok.
Fixed price excluding drinks. Upon being seated you are given a piece of card, green on one side and red on the other. There is a buffet for salad but ignore that. Waiters walk around the restaurant carrying big skewers with different meats on each one (whole legs of lamb, steaks, etc.).

If they see your card is on green they will come over and serve you. If you've put it on red they'll ignore you. You can eat as much as you like turning your card over as it suits you.

The meats tend to all have different marinades.
