well he called it corned beef..
and seeing as it wasn't cooked fully in brine, I'm inclined to believe him.

Although, re-reading and watching I'm not sure now??

When I hear corned beef I think of the pressed minced stuff you get in tins.
I think he's using salt-cured whole beef, which can also be confusingly referred to as corned beef, because of the 'corns' or grains of coarse salt sometimes used in the curing process.

Why thank you kindly. They seemed to go down a treat, which is always good to see.
I make a large chunk of it (~4.5kg) for a drinking weekend trip I go on every six months, been doing it for a fair few years now ... I had some left over and thought why not.
