I think the madras would be easier to make than the korma, tbhit just gives me an excuse to visit the world foods market at the weekend!!

It'll be quite a hot dish, so careful if you decide to add any extra spice!Also, coconut milk is your friend and will cool down the sauce, as long as you don't add it when the sauce is boiling, as it'll curdle.
