There are sometimes thicker stems in with the leaves of mex oregano, it's best to remove them, they don't ever break down and they're unpleasant to eat
I sometimes add a pinch to black beans, near the end of the cooking time, it enhances the earthiness of the sauce

you can't buy it in normal shops here so I've never had it before as I have yet to make it to Mexico, I am informed that it's markedly different from the European stuff so I wanted to get some to see if I can tell the difference.
