you get what you ask for. if you're a longstanding customer or mate of the manager, it will usually be lamb, mutton or (rarely) pork. whatever they have a big chunk of out the back.
if you're unlucky, there's a poor old granny sitting alone waiting for your £5.80 meat dish to arrive home :)
