They're Ultra-ultra-ultra Orthodox. My bet is that she was photoshopped out because it was deemed to be too racy (on the grounds that married men & women cover their hair).

it is not permitted to have printed images of women. Often their faces are blanked out, rarely are they photoshopped this well, but it obviously shows you what the FEAR OF GOD does for your graphics manipulation skills.
It has been known for various communities to have a kind of one-up-manship in these stakes, many of them blotting out the faces of female babies in adverts and suchlike. The spirit behind this is, interestingly enough, not a 'this is truly what the Bible meant and you're all slacker sinners' mentality but more of a 'No it doesn't say you need to do this but we are beautifying the commandments and going one extra to show God how super super super we are and we get extra brownie points.
Now I want brownies :(
