THAT IS FUCKING BIZARRE.
I consider myself fairly in-tune with science, but was not aware that citric acids had this effect on muscle tissue. Any idea how long after death it works? I've never made a lemon chicken and had to chase it round the kitchen!

It's not the muscle tissue that is effected by the lemon juice,
it is the nerves that are forced to fire that cause the muscles to contract.
