I have never heard this
and it makes the tune cover an octave and a half, which is tough for most people unless they're regular singers

I think it's a combination of
people not actually having heard the tune before except when sung around them, not being to jump a full octave and being too shy to attempt it (some people are quite uncomfortable when singing in public even with a group)
