I used to live in a house that had shit water pipes, so that's why I do it

1) 1st one is to get rid of the warm standing water in the pipe, and cool the glass

It's to avoid lead poisoning - we used to have a lead pipe from the mains to our tap (as did most victorian houses). If the water had been standing for a while, it picked up the lead. Much safer to let it run a bit.
