I'm reticent about getting a 9-5 because a) my sleep and other things aren't brilliant at the moment and b) if I had a secure job, I'd probably just end up keeping it and never taking the leap of doing something I really wanted to (whatever that may be).

As you've got the bar-skills to call upon if you decide to step off the ladder?
Why not have a look at something slightly different, you strike be as being a bit bohemian.

I'm looking for a career, rather than a job - if that makes sense?

These organisations are smaller than most corporates and if you've got qualifications that might be relevant to the work they're doing, they'd be looking at calling on the skills of staff far more than those companies who can 'buy in' resources at the drop of a hat.
If you want to use your qualifications, and be able to show this on your C.V, then there are worse route you could follow.
