They are very easy, maker batter with eggs, flour and milk - I don't measure just look for a "back of spoon" covering consistencyheat the lard until it is super hot in the oven, remove the yorkie tray and put on the gas, medium heat, and pour in the batter. get it back in the oven asap and resist opening the door for at least 10 mins.

yeahmuffin tray or something.
don't bother with non-stick though, because at some point they will stick and you'll have to use something metal to get them out.
