it'll still make methane, and more importantly, if you put protein in there, it'll make ammonia. and that will most definitely ming.

and lactobacillus?, you've often noticed how really, really rancid off milk and cheese definitely, absolutely, doesn't smell at all, haven't you?

I thought it made lactic acid rather than methane
and that acid slowed the methane producing organisms.

It's multiple metabolic streams
some bugs upregulate some and downregulate others more. Methane isn't really a smell problem anyway to be fair, that's ammonia.
