Why is pulled pork better than cut pork?

How does not cutting it make it more tender?
Surely its how it cooks that matters. Not having a go or owt I am genuinely curious.

It is cooked differently
slow cooked until it can be pulled apart.

Slow cooked so it falls of the bone.
I've only seen it on programmes like Man Vs Food.
