Most chains operate franchises, so there is no real consistency across the chain apart from possibly where they order their supplies from.

The terms of some/many/most/all franchises include specified suppliers so that can protect their brand, they train the staff at a central location etc.

One rank place proofed dough ever 3 days in bin bags on a disgusting freezer, and left frozen food out for days...., another one did fresh dough twice a day.
