You are right T.H.You calibrate based on what you know - I quite like a Thai green curry, but the difference in quality even in the same establishment can vary a lot

They were really nice thoughI phoned them and said it was too hot last time, so they put fewer chilis in it for me. Then when they turned up, the guy had made notes on the menu saying which ones they could make hotter/milder for me. Now THAT'S customer service.
