I had liver for lunch. I love a bit of offal.
Fillet steak for supper though. Off a proper dirty old beast from The Proper Butcher. None of your flaccid supermarket fillet.

tripe is the one bit of a beast I'm not keen on
there used to be a butcher in Wigan market who sold nothing but tripe ... several different sorts and they all tasted of cow shit

I'm with you on that, might do calv's liver one night, that's proper good.
I'm with you on the 'real butcher is better' thing too. I hate that the supermarkets ran most of them out town
