I know this is similar to the "best album" question below, but I felt it was different enough to warrant a fresh posting...
Since I got my first (10gb) iPod many moons ago, I have rediscovered the joys of the mix-list, which had kind of died out with the death of tapes (and, thus, mixtapes).
There is a lot of joy to be had creating a playlist for a set purpose, be it 20 minutes' worth, or two hours worth.
I especially like creating a good listing for my snowboarding sessions - starting out slow and mellow as you enjoy the view and get ready, then building to some ambient/chilled stuff as you start to carve the piste (makes a difference here to the listing if there has been fresh powder or not), then finally getting rocky and faster as you get into the session, before winding down as you start to think about heading in to get a hot drink and some food...
Faves include: Kruder and Dorfmeister - various tracks, "Bird of Prey" by Fat Boy Slim, "Rusty Cage" and "Spoonman" by Soundgarden, "Cochise" by Audioslave, "Toxicity" by SOAD, "Harvester of Pain" by Pride and Glory and many more besides...
My question is - what do you enjoy making playlists for and what goes on them?

Ty Cobb's a good track..as I said, though, there are many more tracks in that playlist - to goes on for two and a bit hours, to cover a session on my board...
Others playlists include:
"Drive to the shops" - timed to play for a return journey from home to Tesco and back
"Train to work" - usually a Biggles Audiobook or similar (better than the Metro!), along with some music to wake me up and get the heart pumping.
"Train home" - usually some wind-down music and then probably I'll get bored and switch to Phil Jupitus' "perfect ten" podcast...
It's got to the point that the old 10GB iPod 1st gen is used to just shuttle mp3s between various computers, the ipod nano is used exclusively for snowboarding (it's small and I don't mind landing on it!), the ipod Touch got given to my wife and I've nearly filled the iPhone...
/edit - ooh, I forgot the excellent cross-fade between "I Ran" by Flock of Seagulls and "Yoshimi" by the Flaming Lips...it works really well in my snowboarding mix!

On iTunes on my work machine I have the following playlists:
Awesome - Contains tracks that make me headbang or otherwise rock-the-fuck-out. They tend to have incredible drumming, or bone-crunching riffs.
Examples: Queens of the Stone Age - I think I lost my headache (live), Gojira - Backbone, Nero - This Way, Stone Sour - Tumult.
Instrumental - Contains ambient tunes for if I want something soundtrack-y while I work.
Examples: Nine Inch Nails - Ghosts I-IV, or the Quake Soundtrack, a bunch of industrial/EBM instrumental tracks, some trance stuff.
Quiet - Consists of stripped down, acoustic, or otherwise gentle tracks.
Examples: NIN - Still album, Vast - April album.

I can heartily recommend PhillandPhil's Perfect Ten - usually funny enough to make you laugh like a mental on the train and you'll see Bob Hoskins in a whole new light... "'Ello, 'Ello, 'Ello...WALLOP!" - it will make sense, I promise.

I have stuff for the stroll to work on the old Ipod - New Model Army, bit of Chumba, The Ruts, Nirvana etc - rock stuff to get me going for the day.
I have certain CDs that get played in the conservatory when i'm having a ciggie - tend to be Korn, SOAD, RATM, Killing Joke and heavy stuff -
Bath Time is usually some Global Underground mix, leftfield et al, bit of mellow folk
Driving - The Editors, Killers, Oasis, QOTSA, old school grunge stuff.
I could waffle on a bit more. I have certain CDs for every occasion!

Why on earth do you boys all listen to that banging headachey stuff?
A nice bit of Goldfrapp, Cat Power or Kate Walsh is what you want, something nice and relaxing.
And perhaps Kylie for the gym.
Oh, and you can't go wrong with Elvis Costello's 'Pump it up' for the cross-trainer or step machine.

I've just bought myself a new mountain bike - for those in the know it's a Marin Rock Springs; built for aggressive riding.
Anyhow, my existing bike is versatile enough to fit a particular mood. I can either time myself around an off road circuit or throw myself off things with it. The latter usually happens when I've had a bad day for whatever reason.
For a long cross country ride across mixed terrain I'll go for long tracks which help my concentration:

S-Express: Mantra for a state of mind
The Propellerheads: Bond Theme
Sunscreem: Perfect Motion (Boys Own mix)
William Orbit: Water from a vine leaf
Anything nice and chilled is good.

every time I go to a party or dinner with friends. I try to pick twenty tracks and new artists I think they'll be interested in and I generally hit the mark.
I used to have a bit of a reputation for my mix discs... then I disappeared up my own arse for a couple of years and stopped going to parties. Fortunately, just a couple of weeks ago I was invited to a do and worked my magic, and managed to push five new bands onto unsuspecting musos :)

At the moment I'm vaugely constructing one in my head to send someone via mail - so far I'm working on adding Flogging Molly to it, it's gonna be kinda up and down in terms of mood and tempo, got some Neutral Milk Hotel cos I'm getting into them at the moment, and I've added Joey by Concrete Blonde to it, though working where it's gonna fit in is a pain... might sandwich it inbetween Awkward Duet by Sons and daughters and The Card Cheat by the clash.... Then there's the start of course, need to kinda go into Xray specs at some point, so Im thinking maybe opening with The Virgins or Help she can't swim.... I dunno though. But yes, I love making playlists!

I DJ, so when I'm on the technics I suppose that's a playlist- unfortunately I haven't got CD decks or a Mac for Ableton, so short of banging media player on random, playlists/ comp CDs are very much a labour of love.
I do think though that a selection of music, done properly as an interaction with the audience/ bar patrons works best on the fly rather than planned. DJ sets do have a structure though.
