bbq fail

It's becuase I don't have a gas BBQ
Although, I don't really think they are BBQ's, they're just outdoor cookers.

correct,
you could still do it on a normal charcoal bbq you just need something to reflect the heat like some sheet metal. Also don't put it directly over the coals.

It's keeping the temperature relatively level
for over an hour which is nigh on impossible with a charcoal fire.
