sorry to completely change the subject...but do you ever do anything to steak to tenderize it before cooking? I dont want to bash my meat (fnnar) but i've heard that certain marinades really give steak a soft texture, e.g. soy sauce.

Nothing at all.
Pathetically, other than definitely 'resting' the fucker for a good few minutes once you've coooked it, the most 'revelatory' piece of advice I have on the subject is always to cook them from room temperature.

In terms of ensuring tenderness, I just buy expensive steaks....

I do all that as well.
I dont think i'll bother messing with a nice bit of meat, soy sauce would probably change the taste too much.

but during cooking - a little soy sauce, a drop of Worcester sauce, and a little drop of tabasco. some butter in the oil is good as well.
