Because
no matter how well you process it, and no matter how much effort you put in...the graphs will still look a bit cheap and nasty.

and is the reason I use Kaleidagraph for scientific graphs.

I've got my excel graphs to the point where they look acceptable
I mostly use it for manipulating shit loads of data and it's good to be able to see it the way excel shows it.
I'm sure matlab can do what I want, but it's never the same thing more than once, so I'd have to write a routine to do it each time, whereas excel is adaptable enough to be able to do it swiftly and easily.
