the fact that the baker is suffering from diarrhoea, and hence needs a poo, combined with the fact that he is a baker who kneads things, is what gives the pun it's double meaning. in other words what makes it a pun. the baker simply having brown hands would only be half of the gag. the fact that the consistency of a diarrhoea sufferer's faeces is such that you probably couldn't knead them without it all falling between your fingers is pretty irrelevant really.
