When I worked for Greggs in the midlands
I did it to about 5/6 stores, right at the front which was ace, as your are facing out all the time and the doors are always open.
The victim goes for it on the sly, then KNOWS we have done it and KNOWS we will be watching when they raise their head up, so they often just walked straight out.
